Waffle Pizza

Having just returned from a fantastic family trip to Amsterdam, the need to get into the kitchen and make my own food was dire.  There are only so many restaurant meals I can handle before I start to twitch, as much as I love eating out, I just start to crave greens and veggies really badly.  That being said, this recipe is not exactly a greens and veggie recipe, but I think it was also inspired by the many pizza restaurants that we passed on our travels, or, it may be from one too many delicious stroopwaffels that we totally fell in love with (yes even I fall off the wagon)

This recipe is really quick to mix up, making it ideal for that last minute lunch when hunger kicks in but there is nothing available to warm up and eat.  Even though it appears to be thick, the waffle base itself is really light so it does not taste heavy and stodgy as a normal base would, and the beauty of a waffle base is that the tomato topping and cheese melt beautifully into the little squares, once topped with baked prosciutto chips, a dollop of mayo and even add some red onion and greens, makes a superb wheat-free pizza for everyone.  

I apologise as I was still in holiday mode when I made this recipe, so I forgot to take as many pictures of the making process as normal.  It is just a matter of simply mixing all the base ingredients together in a bowl with a fork, and then transferring it to the waffle iron to cook.  The batter mixture is enough for 1 waffle, so alter the numbers according to what suits your family.


The batter is really light and rises rather high, so don’t be tempted to over fill it.  Heat the grill of the oven while the waffles are cooking, so they can be topped and popped straight in….


Once the waffle is cooked, clean up the edges and start the topping


I generally use a garlic or herb flavoured puree, giving it a generous covering

IMG_1734 Cover it with a handful of cheese, then toast the prosciutto next to the pizza, to allow for the cheese to melt at the same time….

  1. 2/3 cup almond flour
  2. 2 organic eggs
  3. 1/3 cup coconut milk (canned)
  4. 1/2 tsp bicarbonate of soda
  5. 1/2 tsp apple cider vinegar
  6. 1/2 tsp herbal salt
  1. Mix all the ingredients together in a bowl with a fork.
  2. Cook the waffles according to the waffle maker specifications
  3. Assemble the pizza as per the pictures
  4. Cook under a grill until the cheese has melted and cooked.
