I’m finally back after an incredible two week holiday cruise on the beautiful Baltic Sea, even though it was two weeks it feels like a lifetime since I last posted something. After eating the most delicious food and being spoilt for choice, I have come back not only keen to get back on track (not that we veered off that much, but that I think that should be a whole other posting) but also really inspired to create delicious dishes that are both exciting and healthy at the same time.
This mousse is something that I have been wanting to make up for a while now, I have previously made other healthy chocolate mousses, but they have all had banana added into the mixture, and my family are not very big on banana flavour, they love banana bread but that is about as far as I can push it. With that in mind, I set about creating this mousse that is loaded with healthy fats and oils, not too much sweetness but flavoured with berries for their high antioxidant and vitamin C content.
Avocado is the base of this gorgeous mousse, besides being fabulously healthy, which you know already, once blended and combined with coconut cream, makes a perfect creamy and smooth base. The mixture is just so simple to make, simply add all the ingredients into a blender or nutribullet and blend well, allow to chill for a few hours in the fridge and it will be ready to serve. The great thing about this mousse is that it is so healthy, you can even have it for breakfast….bonus!!
Chop up the Avocado, and combine with the other ingredients in a blender
Blend well until creamy and well mixed
Pour the mixture into a serving bowl or ramekins, cover and chill in the fridge for a few hours
Decorate with pieces of coconut, raspberries, grated dark chocolate, whipped coconut cream or rose petals and serve…..enjoy
- 400ml canned coconut cream
- 2 ripe avocados
- 1 cup raspberries
- 3 Tbsp raw local honey (very good for those who suffer from hay fever)
- 3 Tbsp organic dark cocoa powder
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- Combine all the ingredients in a blender and mix well until smooth and creamy.
- Pour the mixture into either a serving bowl or individual ramekins, cover and chill for 3 hours
- Decorate with fresh raspberries, whipped coconut cream, grated dark chocolate, rose petals, or coconut shavings and serve.
