I have become so lazy lately, well actually not the kind of lazy where I’m lounging on the couch watching telly, but the kind where I have not managed to get to a tough workout in a few weeks, yeah, I’m guessing has something to do with getting this blog up and running……anyway, today I decided to get out of this rut that I was caught up in and fished out my new funky yoga leggings….
You have got to admit, these are seriously cool leggings??!!
and I headed off to my happy place, my yoga studio which, for an awesome class and coffee with the girls afterwards. Exactly what the batteries needed to recharge and get things back into perspective. The reason for my whole story is that after such a brilliant session, I felt that my great day should not end there, so…I came home and made some nice-cream.
It is called nice-cream for good reason, not only is it refreshing and delicious, but it’s so healthy as it is made simply by blending frozen banana’s and berries together (if you are not a banana fan, don’t be scared off, you can’t taste it, especially if you add loads of berries and toppings). Best of all, children could have it for breakfast and head off to school thinking they had a big bowl of ice-cream.
I always keep a packet of frozen berries and banana’s in the freezer, for the moment when a yearning arrives for a bowl, it is easy enough to whip up in the food processor in seconds. Berries and banana’s combined make an excellent antioxidant rich in potassium, great for after a workout or just to maintain energy levels through out the day.
- 1 frozen banana
- 1 cup frozen mixed berries
- 1-2 tsp coconut milk
- Whipped coconut cream or Coyo for topping
- Berries, dark chocolate chips and coconut shaving for topping
- In a food processor, blend all the ingredients together until it reaches ice-cream consistency.
- Dish into a bowl or tall glass, top with cream or coyo, and toppings
